Whole 30 – Week 2

Last week we had some delicious meals!

Monday night was Tomato Basil Meatloaf from Little Bits of Real Food + Real Talk. The recipe uses ground turkey, but I used ground beef this time since I was sharing it with grandparents. I also baked it in a loaf pan instead of on a baking sheet. The fresh basil is refreshing and gives the meatloaf an Italian taste. It would also be great formed into meatballs and served over pasta (non-whole 30) or zucchini noodles.

Tuesday, we had Taco Bowls with Cauliflower Spanish Rice from Wholesomelicious. This one turned out really well. We loved the cauliflower rice; it was packed with flavor! I used 1 lb of ground turkey and .5 lb of ground beef. It does have some kick to it. If you want it less spicy, leave out the chipotle chile powder!

For lunches, we had Avocado Chicken Salad a couple of times, served on salad greens. This recipe uses an avocado as the binder instead of mayonnaise. Josh loved this meal!

Friday night was game night, so I made wings! I found this recipe for Hawaiian Chicken Wings from All the Healthy Things. Unfortunately, I didn’t get a picture, but it was really good and we will make it again! For sides, I made baked curly fries (which were a flop) and kale chips (which were surprisingly good). I cut the kale into smaller pieces, tossed them with olive oil, salt, and pepper, and then baked them for about 10 minutes at 425.

We ended our week with one of our “go-to” meals: salad with grilled salmon, berries, and mandarin oranges. If you’re not doing whole 30, here is one of our favorites glazes for the salmon:

Asian BBQ Sauce
1/3 c. hoisin sauce
¼ c. chopped cilantro
2 Tbsp lime juice
1 Tbsp tamari (soy sauce)
1 Tbsp finely grated fresh ginger (“Gourmet Garden” makes a good stir-in paste.)
1 Tbsp minced garlic

If you are doing whole 30, you can grill it plain and then drizzle this Citrus Vinaigrette over the salad:
1 orange, juiced + 1 tsp. orange zest
2 Tbsp lemon juice
½ tsp. dried thyme
1 tsp. Dijon mustard
2/3 c. olive oil
A dash of garlic powder
Salt and pepper, to taste

For either glaze/dressing, just combine ingredients in a small bowl and mix well! Enjoy!
