Wow! We’re already in week 4 now, so we’re almost done! It’s been fun trying new recipes, and Josh and I are feeling great! Most of our food was really good last week. However, Friday’s healthy sloppy joe’s were not my favorite, and we got stuck eating the leftovers over the weekend. I suppose you have to have a dud meal once in a while. 😉 But here are some of our favorites:
This “Bacon Burger & Fries Breakfast Bake” from Paleo Running Momma was amazing! We ate it for breakfast several mornings. It’s packed with protein, and the vegetables blend in well. It definitely was a filling breakfast! After the first morning, I heated up the leftover meat and veggies in the microwave and then added a freshly cooked egg to the bowl. (Allow yourself extra time to cook it the first day; there are a lot of parts. Or cook your bacon and ground beef ahead of time!)
Monday evening, we had White Chicken Chili. I think I would rename it Chicken Tortilla Soup (minus the tortilla chips). It had great flavor, but was more of a soup consistency than a chili. I made mine on the stove, and I prepared the chicken ahead of time to make it come together faster. (I baked my chicken and then shredded it with my KitchenAid mixer.) The recipe has several sets of instructions, in case you would rather cook it in the slow cooker or an instant pot. 😊

On Tuesday, we had Sweet Potato Chicken Pad Thai! I made the pad thai sauce in a food processor instead of a blender, and it worked just as well. This recipe was really good, and we enjoyed it even more the next day.

Wednesday, we had friends over for dinner and decided to try Chicken Lettuce Wraps. There were seconds taken and no leftovers, which is a sign of a good meal! We will be making this one again soon. I normally am not a mushroom fan, but two different meals this week used them, and I couldn’t taste them! The only thing I left off of this recipe was the can of water chestnuts, since I had a hard time finding them at the store. I didn’t miss them though. We topped our lettuce wraps with cilantro, cashews, and pineapple.
Thursday, we grilled steak and made sweet potato fries, which I shared the recipe for in week 1.
