My daughter is almost 3 and loves to help mommy in any way that she can. And if chocolate chips are involved…well, you better believe that she’s right there, waiting to be a taste tester. 😊 We had bananas that were getting pretty ripe, so we baked banana muffins together and then immediately ate some of them. I love this recipe – they always turn out moist. Just be sure to eat them up within a couple of days, as they continue to soften! To make this toddler friendly, measure out your ingredients ahead of time, pull out a step stool, and let her get to work, adding the ingredients to the bowl!

Ingredients:
2-3 ripe bananas, mashed
2 Tbsp unsalted butter
1/3 c brown sugar
1/3 c unsweetened apple sauce
2 large egg whites
½ tsp vanilla bean paste
1 ¼ c flour (all-purpose or whole wheat!)
¾ tsp baking soda
¼ tsp salt
¼ c chocolate chips
Directions:
Preheat oven to 325 degrees Fahrenheit and place liners in a cupcake/muffin pan.
In a mixer, combine the butter and brown sugar. Add in the bananas, apple sauce, egg whites, and vanilla bean paste, and mix thoroughly. Add in your dry ingredients, leaving the chocolate chips for last, until everything is combined.
Pour the batter into the prepared pan. (I use a large biscuit scoop to make them even, and it usually makes 10 muffins.) Bake for 22 minutes, or until a toothpick comes out clean. Enjoy!
